Mathias discovered his passion for food early in his native Sweden, peeling his first crayfish at the age of three.... The Scandinavian food scene has recently had a massive influence on menus worldwide, thanks to Noma and various other institutions.
He's worked for some of the biggest names in the business including Gordon Ramsey, Angela Hartnett and John Torode. Following stints in London and Canada he has called Australia home since 2002.
