Mathias Andersson is an experienced chef classically trained in Europe. He has worked across a variety of cuisines and in Michelin starred establishments. Mathias worked under names such as Gordon Ramsay, Angela Hartnett & John Torrode.

Mathias emigrated to Australia in 2002 bringing with him the influences of techniques and food in Europe and merged them with the relaxed style and produce driven  Australian food scene. In Australia Mathias spent 9 years at Philip Johnson's award winning Ecco Bistro, most of those as head chef. During this period, Ecco won best restaurant three years running in the Queensland Restaurant and Catering Awards. From his time at Ecco, Mathias learned an appreciation of high quality produce and a firm desire to let the ingredients speak for themselves.

Mathias believes in building and maintaining a relationship with his produce suppliers to be key to staying across growing trends and also in sourcing his produce locally and organically where at all possible.

Mathias established Mathias Can Cook with a desire to bring restaurant standard food to events both on the ground and in the air. He has a love of customising menus to make the most of what is fresh, seasonal produce. In catering he is more free to achieve this, as every event is unique and he is not bound by a fixed menu.
